OREO BRIGADEIROS

OREO BRIGADEIROS

I’ve taken these babies to a few dinner parties and they were a complete success.

I got a bit obsessed with brigadeiros a while back. I was determined to try to make every single flavor, combination and filling I could.

The great thing about this fudge like dessert is that the possibilities are endless. Dulce de leche, nutty brigadeiros, churro, coconut, chocolate, nutella, almonds. creme brûlée and many many more. Oh and the fillings for the brigadeiros! That’s a whole other story, you can stuff them with strawberries, grapes, chocolate, oreos (wink, wink), ferrero, kit kat, really anything you can come up with.

Now do you understand why I am too obsessed with these beauties? They are amazing!!

These little balls have a few short steps and it’s a quick recipe! The only thing that takes a bit more time is waiting for it to cool down before putting it all together.

EQUIPMENT:

Cooking Pot: The entire brigadeiro is made in one pot over low low heat.

Wooden Spoon: I prefer using a wooden spoon for this recipe, I find it more comfortable.

Plastic Wrap: Make sure the plastic wrap is touching the brigadeiro. Place it in the fridge for cooling.

Spoon: The dessert spoon is the best size. If you have the tablespoon measure use that!

TIPS:

Putting them together: To put the balls together, first you need to place a tiny bit of butter in your palms and spread it all over your palms and fingers so that the brigadeiro doesn’t stick.

Oreo: For the filling, I used mini oreos. If you decide to use normal sized oreos you have two options. The first one is to make a BIG brigadeiro using the entire oreo cookie and the second one is to cut it in smaller pieces. I find the mini oreos to be the best for this recipe.

Size: I use the tablespoon measure for the brigadeiro. You can weigh the dough as well if you prefer. You want to completely cover the mini oreo with the brigadeiro, enough so that you don’t see the oreo but don’t add too much or it will turn out too big.

The heat: Cook it over low low low heat! Turning up the heat won’t make it cook faster, you actually might burn it!! So, low low heat and constant stirring. Every few minutes you can tilt the pot a bit to see if the dough separates from the base of the pot. Once it completely separates from the bottom of the pot it’s ready.
