WHITE CHOCOLATE OREO TRUFFLE TART

I believe any recipe with Oreos in it becomes automatically delicious. Classic oreos make anything so much better! Think about it, the oreo Mcflurry for example. I believe that ice-cream dessert takes me to my childhood overtime I have it. Oreo Cheesecake, truffles, cookies, brownies with this delicious cookie, everything is just delicious! So, I’ve been experimenting with the original cookie only but I know there are so many different and interesting flavors for this cookie! I remember, when I started baking and selling my desserts, half of my menu had oreos in them!! One of those desserts, back then, was the oreo truffle. This truffle was made with two ingredients, Oreos and cream cheese. So easy to make and delicious.

With that Oreo truffle in mind, and it’s beautiful flavor, this tart was born. I was looking for a complete tart that mimics the flavors of that Oreo sandwich cookie on its own. So, the base, fillings and decorations just make you automatically think about that cookie.

PARTS OF THIS OREO TRUFFLE TART

Start with the base, the actual tart. The tart base is a regular chocolate tart with some crushed Oreo cookies added to give it extra flavor. So, process the cookie until it has the texture of flour and that gives the chocolate base some extra Oreo flavor.

The first filling is a creamy, fudge or brigadeiro. It’s a sweetened condensed milk based cream. To make this filling cookies and cream flavored, you will use the filling of the Oreo cookies. I wanted to get a creamy white brigadeiro or fudge that almost tasted like the filling of the oreos or a cookies and cream bar. So, once your fudge is ready, add some crushed oreo cookies and you are done! It looks just like a cookies and cream chocolate bar.

The second filling for this beautiful oreo truffle tart is a chocolate ganache with an extra. That extra is, you guessed it, Oreo cookie filling! That way you can maintain a constant of texture and flavor throughout the tart. The Oreo cookie fillings give this ganache an extra creaminess and it changes the flavor a bit.

Finally, the decoration. This tart is decorates with some Oreo truffles covered in white chocolate. Decorate the truffles with some extra oreo cookie pieces and you are done! The truffles are pretty easy to make and take almost no time at all! It’s a simple mixture of cream cheese and Oreo cookies without the filling. You can shape them as you like, place them in the freezer for a couple of minutes so they maintain their shape and then cover them in chocolate.

TIPS FOR A PERFECT OREO TRUFFLE TART:

The dough: You want your tart base to be thin and the sides to be tall. So, you want it to maintain its shape when baking. The first thing you have to do is, once the dough is ready, cover it with plastic wrap and place in the fridge for an hour. This time in the cold will make it easier to handle once you are placing it in the cake pan or tart mold. The second thing you want to do is, once in the tart mold, place it in the freezer for and extra cooling down. This second cooling will help in keeping everything where it is supposed to be once it is in the oven.

Also, before you place the tart in the oven, pinch the base with a fork a couple of times. This is so the air can come out and the base does not grow more that you want it to.

Fillings: I recommend making the first filling, the fudge, the day before actually making the tart. This is because this filling has to rest in the fridge until it completely cools down. The ganache filling, on the other hand, can be made just before pouring into the tart. You can directly pour over the fudge letting it cool down in the fridge for a couple of minutes after.

Oreo truffle: The truffles have a very creamy texture. So, for them to maintain their shape, they have to be frozen. Shape them, place them over parchment paper in a plate and place them in the freezer. It is very important that you use parchment paper and not place the truffles directly on a plate. This is because, if you do place them directly on the place they tend to want to stick to it. Melt a bit of white chocolate and completely cover the frozen truffles. While you are doing this, I recommend already placing them in the tart. The white chocolate will make the truffles stick to each other on the tart making a beautiful topping.

EQUIPMENT:

Bowls: For the tart dough, a medium bowl works great. You will need a small bowl for the chocolate as well. In case you want to measure everything before you start, you will also use a bunch of small bowls for that.

Saucepan: You will need a saucepan for both fillings, the fudge and the ganache.

Tart or cake pan: For this dessert, I made my tart base in a cake pan. I wanted the sides to go straight up. a 7 to 8 Inch pan or cake ring works perfectly. You can also make this is a glass or ceramic baking dish.

Parchment paper: For the oreo truffles. You will need it to place them in the freezer.

Plastic wrap: You will need this for the fudge or brigadeiro. Remember, when you cover it, the plastic wrap need to be touching your fudge.

Cutlery: Forks, spoons and knives. You will need a fork to make the holes in the tart base, the spoon to mi the brigadeiro, ganache, melted chocolate, everything. Finally, knives to cut or chop whatever you need.

Silicone Spatula: This, you will use to spread the fillings in the tart.

Ingredients

TART BASE

  • 120 gr Butter 
  • 80 gr powdered sugar 
  • 25 gr Crushed Oreo cookies (no filling) 
  • 210 gr Flour 
  • 1 tsp Vanilla extract 
  • 1 pinch of salt 
  • 1 Egg 
  • 90 gr Cacao powder 

FILLING 1

  • 1/2 Can sweetened condensed milk 
  • Fillings from 1 Oreo package (15 cookies) (Keep the cookies) 
  • 1 TBSP butter 
  • 4 Crushed Oreo cookies (without the filling )

FILLING 2

  • 100 gr heavy cream 
  • 100 gr semisweet chocolate 
  • The filling of two Oreo packages (around 30 cookies) (keep the cookies) 

TRUFFLES

  • 200 gr White chocolate 
  • 36 Oreo cookies (pairs) (use all the cookies you have left from the fillings) + extra fro decoration 
  • 200 gr Full fat cream cheese 

Instructions

TART BASE

  1. Add butter, powdered sugar, vanilla extract, salt and oreos to a bowl. Mix well.
  2. Add egg and mix in.
  3. Add flour and cacao powder and slowly mix in until a dough forms.
  4. Press it down a bit and cover with plastic wrap. Let it rest in the fridge for an hour.
  5. Prep your pan with some butter and flour so that the tart doesn't stick. Preheat the oven at 350F
  6. Sprinkle some flour on the counter and roll out the dough. Place in your pan.
  7. Place the pan in the freezer for ten to fifteen minutes.
  8. With a fork make some holes in the bottom of the tart, the base.
  9. Bake for 20 minutes.

FILLING 1

  1. Add all the ingredients to a saucepan and mix well.
  2. Place over low heat and stir constantly.
  3. Tilt the pan to one side. When it begins to come off completely from the bottom of the pan when you tilt it it is done.

FILLING 2

  1. Add heavy cream to a saucepan and place over medium heat.
  2. When it begind to bubble up on the sides, turn the heat off, add the chocolate and the oreo cookie fillings.
  3. Mix well until it becomes smooth.

OREO TRUFFLES AND PUTTING IT ALL TOGETHER

  1. Start with the truffles. Process the oreo cookies until flour like texture.
  2. Mix with the cream cheese until it looks like a dough and everything is completely mixed in.
  3. Make balls measuring 1 TBSP for each.
  4. Place the balls over parchment paper in a plate and place in the freezer until they harden.
  5. Start making the tart by adding the fudge filling first and then the ganache on top. Make sure your ganache isn't too hot.
  6. Melt the chocolate in a bowl in the microwave 20 seconds at a time. Stirring between each one until completely melted.
  7. Take the truffles out of the freezer. One at a time, cover in white chocolate and place them in the tart. Start in the center and them go to the sides covering as much space as you can. With the chocolate still melted, add some crushed oreos on tops of each truffle.
  8. Finich the tart by adding more processed oreos on top.
