THE HEALTHY CHARCUTERIE BOARD YOU NEED

I am in love with charcuterie boards. Any combination of cheeses, charcuterie, honey, jams, and hoy they combine to make beautiful bites. I am a fan of making these type of boards, but even more, enjoying them. I kind of feel like these boards, and making them look so pretty makes them the perfect excuse to gather everyone around something, talking, laughing, enjoying company. And, after a year of quarantine, the only thing I want to do is find excuses to see my whole family and friends. Am I right? This healthy charcuterie board has a few options for everyone!

WHAT ARE WE USING FOR THIS HEALTHY CHARCUTERIE BOARD?

DIPS:

The first thing I want to talk to you about is the very last thing I would normally put in the board, dips. When making regular boards, I use honey, or jams with interesting flavors that combine perfectly with the cheeses. In this case, I used some hummus and a basil cream cheese dip.

Hummus is a natural garbanzo paste, that is full of fiber, protein and flavor. So delicious. The perfect combination for the dippers in the board.

The second dips, for this board is a mixture of cream cheese, a bit of almond milk and some fresh basil leaves. The texture is almost almost like a basil alioli or a homemade mayo without the extra oil. I recommend you try it, very tasty and so easy to put together.

VEGGIES:

In this case, and different from most boards, we fill up with veggies. with the dips I chose in mind, the first two were celery sticks and baby carrots. The celery combines perfectly with hummus. So crunchy and fresh, deliciious. I added carrots as well, well, baby carrots because, they look so nice and perfectly sized.

When thinking about what cheese I wanted to add as well, I added some tomato slices, and fresh basil leaves. I’m sure you’ve tried this combination before, in salads, sandwiches, pies, anything. And, I believe you already know what cheese I’m talking about.

CHARCUTERIE:

I love turkey. Turkey breast slices are so delicious and healthy. I believe that the thinly sliced turkey breast was all that board needed. Plus, it combines so well with the basil dip, the tomato slices and mozzarella. What else would you add to this board?

CHEESE:

For this healthy board, besides from the cream cheese dip, add some fresh mozzarella. This is a very combine- able cheese that goes well with almost everything.

CRACKERS:

For this healthy charcuterie board, place some whole wheat crackers and some tiny rice cakes. I personally, love rice cakes so they were a no brainer for me. But, if you don’t really like them just use the crakers or bread slices you prefer.

EXTRAS:

Walnuts and toasted almonds! Nothing else. Use these to fill the tiny available spaces in the board.

Also, to add some more color and freshness to the board, use the tiny basil leaves in the smallest places. This gives the board a pop of color and when it looks fuller, it looks prettier!

THE HEALTHY CHARCUTERIE BOARD YOU NEED

Ingredients

  • 200 gr Hummus
  • 3 Tbsp cream cheese (light or regular)
  • 1 Splash of almond milk
  • 4 to 5 Fresh basil leaves
  • 200 gr thinly sliced turkey breast.
  • 100 gr fresh mozzarella
  • Celery
  • Baby carrots
  • 1 Tomato Sliced and cut in half
  • Basil Leaves
  • 1 Package Small rice cakes
  • Whole wheat crackers
  • Toasted almonds
  • Walnuts

Instructions

  1. Star by placing your bowls on the board. Just the bowls, don't add the dips yet. Use different sized bowls. Place them one on each side.
  2. Around the bigger bowl, on the bottom of the board, add the celery sticks and baby carrots.
  3. Add the turkey slices in a like going from the bottom, going to the left of the bowl all the way up.
  4. Where the turkey line finishes, add the tomato and mozzarella slices. Do it in a straight line going to the smaller bowl. In that same order, add more tomato slices and cheese from the corner to the bottom.
  5. Add basil leaves in between the tomato and turkey.
  6. Fill the available spaces on the side with crackers.
  7. Fill the smaller available spaces with nuts.
  8. Add hummus to the bigger bowl and cheese to the smaller one.
  9. Add smaller basil leaves for decoration.
