What is the best part of a brownie? Tough question right? Well, I think the best part of a classic brownie is how moist the center is and the chocolate-y flavor in every bite. In my opinion, everything is better with a bit of chocolate. Brownies, with ice cream, dulce de leche, nutella, cookies, basically anything you want! Just perfect. Now, one of my favorite desserts in the world are cookies. Every single flavor and shape of cookie. Yum. This recipe combines both and created the best brownie cookies you’ll have in you life.

I personally think, every cookie should be extremely moist on the inside, not just this brownie cookie. That being said, this cookie specifically has to be specially moist on the inside, just like a brownie. The thing is, this is not just a chocolate cookie, no, these are brownie cookies.

WHAT ARE WE LOOKING FOR THESE BROWNIE COOKIES:

Let’s start at the beginning. The number one priority for this cookie is maintaining the chocolate flavor of the brownie. Have you ever tried a brownie so moist and chocolate-y that it felt as if you were eating melted chocolate? This is what we want for this cookie.

Second, the moist center of the brownie. The outsides are kind of crunchy and then the insides just melt in you mouth. The most amazing thing about this cookie recipe is that, they last for days! Their texture and moist center sty like that for days! I promise!

Finally, nuts! And not me going nuts for this recipe, no. I know, not all brownies have nuts but I though that it was a great addition to this cookie.

TIPS FOR THE PERFECT BROWNIE COOKIES:

The steps: What is the difference between this brownie cookie and a regular chocolate cookie? You start the dough like you would a regular brownie. What we change to have this brownie in cookie form in the last part of the recipe. Add a bit more of flour, a few extra ingredients and you have a perfectly shaped cookie that tastes like a brownie.

Add ons: To make this cookie, there are two add ons that you really need, chocolate chips and walnuts. Now, If you don’t like walnuts, don’t worry. You can just skip this ingredient and just add the chocolate chips. Now, do not leave the chocolate chips out! They give the cookie and extra moistness, flavor, and texture. Plus, biting into a cookie and finding a pool of melted chocolate is the best thing ever.

The chocolate: I recommend getting a chocolate bar and chopping it yourself into smaller pieces. Having different sized pieces. I am not a fan of pre-made chocolate chips most of the time. Not because of the flavor but because of the look. I think, the differently sized pieces of chocolate give the cookie more rustic look that looks so good.

Cooling: Most of the time, I make cookies with cold butter. In this case, the recipe starts with melting the butter with sugar and cacao powder. So, once the dough is ready, cover it with plastic wrap and place it in the fridge for at least an hour. This is so that the cookies come out thick and maintain their shape while baking.

EQUIPMENT:

Bowls: A big bowl for the cookie dough. You will make everything in this one so make sure its microwaveable. I recommend weighing and having all the ingredients ready before you start, so take out a few small bowls for that as well.

Silicone Spatula: You can use a spoon as well or the dough attachment of the stand mixer if you prefer! I find this the most comfortable.

Microwave: For the first steps of this brownie cookie recipe you will use the microwave.

Kitchen scale and cup measures: Remember when baking, correct measurements go a long way.

Baking sheet: To bake the cookies in. Remember to leave a few inches between each cookie when baking.

Knife: I like using a chefs knife when chopping chocolate bars becasue its more comfortable for me.

Plastic wrap: To cover the bowl of raw dough hand place in the fridge for at least an hour.

Ingredients

  • 140 gr Butter + Extra for baking sheet.
  • 300 gr Sugar
  • 1 Tsp Vanilla extract
  • 75 gr Cacao powder
  • 2 eggs
  • 2 1/4 Cups flour
  • 2 tsp Baking powder
  • 1 Tsp baking soda
  • 2 tsp cornstarch
  • 1 Pinch of salt
  • 400 gr semisweet chocolate
  • 40 gr walnuts

Instructions

  1. Add butter, sugar and cacao to a bowl. Place in the microwave for 1 minute. Mix well and place in the microwave for another minute. Mix well.
  2. Add eggs one at a time, mixing well between each one.
  3. add vanilla extract.
  4. Add flour, baking powder, baking soda, salt and cornstarch. Mix well.
  5. Chop nuts and chocolate. Add to the dough. Fold in.
  6. Cover with plastic wrap and place in the fridge for at least 1 hour.
  7. Preheat the oven to 350F
  8. Spread some butter on the baking sheet, or parchment paper.
  9. Make 150 gr cookie dough balls and bake for 18 minutes.
