STRAWBERRIES AND CREAM TART

I grew up having strawberries and condensed milk for dessert! Such an amazing combination!

A bunch of fresh strawberries with a LOT of condensed milk, let it sit there for a while until the condensed milk turns kind of pink. Amazing. If you haven’t tried it before do it now! Trust me!

With that simple dessert in mind, this gorgeous tart was born!

THE BASE:

This is a fairly simple dough to make.

It comes together extremely quickly but you have to chill it for a few minutes as soon as you make it and after putting it in the tart pan.

A well chilled dough, maintains it’s shape, the thin and crispy sides and what you get is a GREAT tart base.

The tart base has to be completely baked on its own before adding both fillings and letting them set.

The great thing about this dessert, is that you can make it in a tart pan and take it out before adding the fillings or you can make it in a glass pyrex or something similar and just leave it there. It looks amazing either way!

THE FILLING:

We have two separate fillings, the condensed milk filling and the strawberry coulis.

I absolutely LOVE the condensed milk filling. I use it all the time, for my tres leches cake, the truffles and this beautiful tart! So creamy and sweet, amazing!

TIP: Cook the filling a little bit extra, make it a bit thicker so that it maintains its shape better.

CONDENSED MILK FILLING

For the second filling, you’ll need strawberries, sugar and water. Three simple ingredients! Easy and quick!

Fresh or frozen strawberries work just as fine! Cook them until they are soft and then transfer the entire mixture to a blender. Pulse a few times and you are almost done!

You’ll be using the unflavored gelatin right before adding the coulis to the tart base so that after chilling it maintains it’s shape as well.

TOPPING:

Use the prettiest strawberries!

It’s better if you choose the ones that are similar in size. Cut them in slices and start placing them one right next to the other from the edges to the center. (See top photo for reference)

Aaaaaand DONE! A beautiful and delicious strawberry and condensed milk tart!

EQUIPMENT:

Stand Mixer: For the first few steps of the base.

Bowl: One for the tart dough and a small one for the gelatin.

Blender: Once you’re done with the strawberry coulis, let it cool for a while and throw it in the blender. Hand mixer works too!

Cooking pot: You’ll need one for the condensed milk filling and another for the strawberries.

Bowls or plates: Use them to place the filling in the fridge.

Tart pan: You can use any tart pan you have or make it in a glass pyrex. Both options turn out great!

STRAWBERRIES AND CONDENSED MILK TART

STRAWBERRIES AND CONDENSED MILK TART

Ingredients

  • 100 gr butter
  • 1 egg
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 250 gr all purpose flour
  • 1 recipe condensed milk filling (See link for recipe)
  • 400 gr strawberries
  • 1/3 cup water
  • 1/4 cup sugar
  • 10 gr unflavored gelatin
  • Fresh strawberries

Instructions

  1. With the stand mixer, mix butter with sugar.
  2. Add egg and vanilla, mix a little bit more until barely incorporated.
  3. With a silicone spatula or a spoon add flour and fold in until it looks like dough.
  4. Cover and chill the dough for half an hour.
  5. Stretch out the dough and transfer it to the tart mold. Chill for an extra 15 minutes.
  6. Preheat the oven at 170 degrees celsius or 340 F.
  7. Bake completely.
  8. Make the condensed milk filling. (Don't forget to cook it a little extra)
  9. For the strawberry filling, place sugar and water on low heat until sugar is completely melted.
  10. Add strawberries and cook until soft.
  11. Let cool and transfer to a blender. Pulse until barely processed.
  12. Hydrate 10 gr of unflavored gelatin in a small bowl with a bit of water. Heat it in the microwave. Add a bit of the strawberry coulis to the gelatin and mix. Add the small mixture to the rest of the strawberry and mix well. (REMEMBER TO DO THIS WHEN YOU ARE GOING TO PLACE IT IN THE TART)
  13. First, add the condensed milk filling to the tart base, then the strawberry coulis. Chill.
  14. Once the fillings set, cut the fresh strawberries and place them on top.
