S’MORES BROWNIES

I love experimenting with add ons for brownies. Let’s be honest, classic brownies do not need anything to be good. The taste, the texture and the look is just perfect. Adding and adapting that perfect base that is the brownie is never too much in my opinion. Brownie batter is pure chocolate, so anything that goes well with chocolate can be added to brownies for a perfect combo. These gorgeous s’mores brownies are a combination of three different flavors in every single bite.

What are s’mores? Well, s’mores are a very American dessert. I always see this dessert in movies, specially in cold areas. Camping, a huge fire and everyone around it toasting marshmellows. The dessert consists of a toasted marshmellow. Toasted on the outside, soft and creamy on the inside. Once the marshmellow is ready, you plce it between two graham crackers and chocolate. The heat of the marshmellow will melt that chocolate making it soft as well. The absolute perfect combination.

What a flavor combination right? That is why s’mores are such a popular dessert. All that, in brownies. That is wat this dessert is about. Before we continue to the recipe, I’ll link a couple of different desserts you might be interested in as well.

PARTS OF THE S’MORES BROWNIE

Let’s start with the base of this dessert, the brownie. The brownie recipe is easy to make and it comes together really fast. You get a soft and moist on the inside brownie in a couple of minutes. Now, for this s’mores brownie, add some graham crackers in the middle. Once the brownie with the graham crackers are ready, add toppings. This recipe has some chocolate ganache and toasted marshmellows on top.

After those pretty toasted marshmellows, add some crushed graham crackers and a chocolate square. Amazing flavor and the look of the brownie is just superior. A brownie straight out of pinterest.

TIPS FOR PERFECT S’MORES BROWNIES:

The pan: Make suree the pan you use to bake the brownies in does not fill up as much. You will need that extra space on the top when adding the toppings. Really, you need extra space for the ganache.

Putting everything together: Once the brownie is ready, aand it has reached room temperature, add the ganache on top. Very carefully spread that gaanche to cover the entire surface of the brownie. You need to let the ganache cool down completely before cutting the brownies into squares. Once it cools down, cut the brownies into squares. On top of that cold ganache, add the toasted marshmellows, extra graham cracker crumbs and a chocolate square.

Toasting the marshmellows: There are two different ways to toast marshmellows. The first is using a kitchen torch. Cut the marshmellows in half and then place them on the ganache. Use the toch and toast them as much as you like. The second way is using the stove. Cut the marshmellows in half and using a fork move them over the fire from the stove until toasted. In both cases you need to be careful because the marshmellow tend to light up easily. Don’t stress about it, just make sure to pay attention and blow the marshmellow when you see it light up too much.

EQUIPMENT:

Bowls: You’ll need one bowl for the brownie batter.

Silicone spatula: I love using a silicone spatula to mix in the brownie batter and for the ganache. I find it really comfortable when spreaading the batter and the ganache as well.

Aluminum foil: Or parchment paper. Use it on the base of your cake pan. It helps to take the brownie out of the pan easily.

Knives: A large knife to cut the brownies into squares, another to cut the marshmellows in half and to chop the chocolate as well.

Chopping board: To cut all the ingredients that you need.

Sauce pan: To make the ganache in.

Kitchen scale: To weigh all the ingredients in this recipe.

Fork: Or a kitchen torch to toast the marshmellows. Use a for to toast them on the stove if necessary.

Plastic wrap: To cover the brownie when letting it cool in the fridge.

S'MORES BROWNIES

Ingredients

  • 140 gr butter
  • 300 gr sugar
  • 1 tsp vanilla extract
  • 75 gr cacao powder
  • 2 large eggs
  • 60 gr flour
  • 1 pinch of salt
  • 1 Package of graham crackers
  • 18 marshmellows
  • 1 Hershey's chocolate bar
  • 100 ml heavy cream
  • 150 gr semi sweet chocolate

Instructions

  1. Preheat the oven to 350F.
  2. Add butter, sugar and cacao powder to a bowl. Place in the microwave for 1 minute.
  3. Mix well and place in the microwave for another minute. Mix well, lowering the temperature that way a bit.
  4. Add eggs one at a time, mix well.
  5. Add vanilla extract and mix in.
  6. Add flour and salt. Slowly mix in.
  7. Place parchment paper on your pan, covering the base and sides.
  8. Spread half the brownie batter on the base. Cover completely with graham crackers. Add the rest of the batter over the crackers, covering completely.
  9. Place brownie in the oven and bake. When inserting a toothpick it comes out with some crumbs, not completely clean.
  10. For the ganache, add the heavy cream to a sauce pan over medium heat until it bubbles on the sides. Turn the heat off and add chopped semi sweet chocolate. Stir in until completely mixed.
  11. Pour the ganache over the brownie. Spread carefully over the entire surface. Cover and place in the fridge to cool down.
  12. Cut the brownies into squares. Around 9 squares.
  13. Cut marshmellows into half, toast and place them on top of the ganache. Decorate with graham cracker crumbs and a chocolate square.
