What if I told you these babies are made with just a few healthy ingredients, o added sugar and in a few minutes?

These energy balls came to be after a few months in quarantine. I was trying out so many different recipes and eating so much sugar in the process. I was left with a sweet craving everyday after lunch. Most people tell you to have some tea and the craving will go away, but to be honest that did not work as well with me.

So, a few ingredients, a food processor and just that! You have perfect chocolate energy balls for dessert or a healthy snack.

EQUIPMENT:

Food processor: This recipe comes together almost completely in the food processor. Just add everything in it and proceeds until a dough forms.

Oven: Toast the hazelnuts before making the butter so that they have a stronger flavor and better texture.

Baking sheet: To place the hazelnuts in the oven!

Knife: Save part of the nuts fro the decoration. Use a knife to chop the nuts roughly.

Cup Measures: All of the ingredients have a very important part in making the balls taste great and have a nice texture. Measure the ingredients before you start making them and the entire recipe comes together in two seconds!

TIPS:

Hazelnuts: Making hazelnut butter from scratch takes a bit of time in the processor, just be patient!

Cacao: Look for a cacao powder with no added sugar. The dates in the recipe give enough sweetness.

Storing: I like placing them in an airtight container, plastic or glass, and in the freezer. This way, they keep for much longer. Just thaw them for a few minutes before eating and it tastes amazing!

Ingredients

  • 1/2 Cup Oat Flour 
  • 1/2 Cup hazelnuts + extra for decoration
  • 1/2 Cup cacao powder
  • 1 Tsp vanilla extract 
  • 1/2 cup dates 
  • 1 Pinch salt 

Instructions

  1. Places dates in hot water for 5 minutes.
  2. Meanwhile, place the hazelnuts in the oven for 5 to 10 minutes at 350F. Once toasted, remove from the oven and peel.
  3. Process nuts until they turn to nut butter.
  4. Add flour, dates, cacao, vanilla extract and sal.
  5. Process until completely mixed.
  6. Separate in 11 balls and cover in chopped hazelnuts.
  7. Store in a irtight container in the fridge or freezer.
