PESTO & 3 CHEESE QUICK FLATBREAD PIZZA
Who else loves pizza? I think There are many pizza fans out there. Also, my honest opinion is that every variation of this food has to be appreciated. The classic italian pizza, the North american version that is a bit more “junk food-y”, and the pizza with toppings like chicken and different cheeses.This is actually an easy to make quick flatbread pizza recipe. This will take you ten minutes to make I promise!
Another thing I can probably eat every single day is pesto. Does it happen to you? A specific flavor or spice that if you can have for the rest of your life you will be happy. For me? Pesto. This pesto and 3 cheese flatbread pizza is great for when you feel like having pizza but without that extra work. A fun activity fro family night or date night for example. It comes together in a couple of minutes and it tastes so good!
WHAT IS IN THIS FLATBREAD PIZZA?
This pizza, like the tittle says has a pesto base and 3 cheese mixture on top. The ides is, that with this recipe you make an appetizer to combine with other foods like a charcuterie board for example or crostini. When I came up with this recipe I had a very quiet and easy valentines day dinner for two at home. Cooking together and serving this flatbread pizza with some good wine. What an amazing date night right?
So, the dough recipe is not mine, but I will link it in the post in case you want to make it. This is a dough that is made with three ingredients and in a food processor. So quick and easy, no mess and it tastes really good. Another option, is buying a naked pizza crust or the dough. So easy and makes life easier.
Instead of tomato or pizza sauce, I used pesto. The pesto I used is also store bought. I found a delicious brand that I love and use for anything! This is also a life saver.
For the toppings, I used three different cheeses. Parmesan cheese, smoked provolone cheese and mozzarella. I thought this combination was delicious. You can try any type of cheese you like!
TIPS FOR A DELICIOUS FLATBREAD PIZZA:
The dough: As I mentioned before, you can make the dough from scratch or buy a premed crust or pizza dough. Both options are completely delicious.
The Pesto: I recommend buying a jar of pesto from the super market. If you want to, you can make your own. Since you are using the pesto instead of the tomato sauce, use a lot!! You want to completely taste the delicious flavor of the pesto combined with the cheese. You don’t want the cheeses to overpower your flatbread pizza.
The Cheese: I recommend grating the cheese. The mozzarella can be used in bits or slices, just break them with your hands and toss over the pesto. Mozzarella melts fast, so you don’t need to worry about it. On the other hand, parmesan and provolone cheese need a little bit of extra help. Grate them and mix them in a bowl or on a plate before tossing over the pizza.
The Topping: You can complete the flatbread pizza with, more pesto on top, a bit of oregano or for example basil leaves. Whatever you want!
EQUIPMENT:
Food processor: You will need this if you decide to make the dough as well.
Spoon: For serving and spreading the pesto on the flatbread.
Baking Sheet: To place the pizza in the oven. In tis case, I made my pizza a rectangle so my regular rectangle baking sheet was fine. If you are making a round pizza look for a round one.
Cheese grater: The kind you find most comfortable for harder cheeses. Look out for your fingers!
Plate: I think having all your ingredients ready before cooking or baking is the best. It makes it easier and way quicker. Grate the cheeses over the plate and mix them a bit.
Rolling pin: For the pizza dough! (in case you make it from scratch)
Fork: To pinch the pizza dough all over so that the air inside can come out!

PESTO & 3 CHEESE QUICK FLATBREAD PIZZA
Ingredients
THE DOUGH
- 3 Cups flour
- 1 tsp Salt
- 1 Cup warm water
- 3 tbsp Olive oil
TOPPINGS
- 1/2 Cup pesto
- 1 1/2 Cup freshly grated parmesan cheese
- 1 1/2 Cup freshly grated provolone cheese
- 100 gr mozzarella cheese
Instructions
- Preheat the oven to 500F.
- Add flour and salt to a food processor and mix.
- Add water and oil. Miz until a dough forms.
- Place the dough over a lightly floured surface and knead with your hands for about a minute.
- Split the dough in half.
- Roll out one of the pieces to the shape you like.
- Poke holes all over the dough with a fork.
- Bake for 5 to 8 minutes or until the edges turn golden brown.
- Add toppings and bake for an extra 10 minutes or until completely melted.
- Repeat with the rest of the dough and ingredients.
