OREO CHEESECAKE COOKIES
Everything I love about a big slice of oreo cheesecake in a small, round package. This cookie is so amazing and you can make it in a single bowl. How great is that?! No mess, quick recipe and great flavor!
I’ve always been a fan of cookies in general. Every flavor, combination, filling they come in! Big fan. On the other hand, I think this cookie makes my top 5 list.
Making the dough is basically throwing everything in the bowl, mixing well and then covering each cookie dough ball with oreo cookie pieces before baking it. We want soft, moist cookies. This means we barely bake it until it’s cooked.
This recipe contains no eggs and no baking powder because we are not looking for volume when baking, we want more of a spread. Also, these cookies have to bake until they are barely cooked, not browned.
Overtime I describe a cookie or dessert I like a lot, I feel like baking at least half a batch to eat while writing!
INGREDIENTS:
Just a few ingredients for amazing flavor and combination!
The base for the cheesecake cookie is a combination of butter and cream cheese. The first thing you do is mix these two completely in a stand mixer.
Once they become a single light beige doug, you add the rest of the ingredients, flour, sugar and vanilla. This time, mix it with a spoon or spatula. We don’t want extra air in our cookies making them rise too much.
The dough is supposed to be a bit sticky. Add chocolate chips and make same sized balls with your hands or a cookie scoop. The last step is to completely cover the balls with oreo pieces. I like leaving a few bigger pieces in the mix so that the cookies have a less “perfect” look. I like using the potato masher but a food processor works as well. Also, you can add the cookies to a bag, close it and break them with a rolling pin!
EQUIPMENT:
Bowl: This recipe comes together in one bowl! No need for extra messes.
Potato Masher: This is what I like to use when making these babies. Like I mentioned before, a food processor or a bag and rolling pin work just as fine!
Plate: Add the oreos to a plate, makes it easier to cover the dough balls.
Cookie sheet: Remember to leave a bit of space between cookies, they tend to spread a bit.
Parchment paper: Or butter. These keep the cookies from sticking to the cookie sheet.
Stand Mixer: The first step calls for a mixer! Cream the butter and cream cheese and you’re done!
Spoon: Or silicone spatula to add the rest of the ingredients.
Knife: If you use a chocolate bar instead of chips, you’ll need a knife to cut them into tiny pieces.
aaaaaand you’re done! Get cooking!
OREO CHEESECAKE COOKIES
Ingredients
- 100 gr Cream cheese
- 100 gr Butter
- 1 Cup of sugar
- 1 Tsp vanilla extract
- 1 Cup + 2 TBSP All purpose flour
- 1 Cup Chocolate chips
- 250 gr Oreos
Instructions
- Preheat the oven at 340 F.
- Ad butter and cream cheese to a bowl of a stand mixer and cream together.
- Add vanilla, sugar and flour. Mix in with a spoon or silicone spatula.
- Add chocolate chips. Mix well.
- Separate dough into small balls.
- Remove the center from the oreos and crush the cookies.
- Completely cover the dough balls with oreo pieces.
- Cool dough for 10 minutes
- Bake for around 15 to 18 minutes. Check cookie, remove before they turn brown on the sides.
