OAT CRUST APPLE PIE

Apple pie has always been one of my favorite desserts. The first time I had it, I think was when I was about 11 years old in one of our family trips. It was love at first sight!

I really enjoyed making this version of the american classic, because even though I’ve made a few changes to make it healthier, it tastes amazing!

It starts with an oat flour base sweetened with a little bit of honey, the filling is the perfect combination of cinnamon, nutmeg and red apples and an oat and almond topping. Great for keeping in the fridge and having it throughout the week or heat it up and add some sugar free ice-cream for dessert.

YOU WILL NEED

  • Food processor
  • Round baking pan
  • Frying pan

THE CRUST

To start making the crust, you’ll need a food processor. This is where we place all the ingredients, and the best part is that you don’t have to place then in a specific order, just throw it all in there and mix. Make sure everything is properly processed and then place the dough directly on the baking pan you want to use!

The dough has a sandy but moist texture. This allows you to give it the shape and thickness you like and after its baked it doesn’t crumble and break.

Don’t forget to bake the crust on it’s own! This step is very important to make sure its well baked and it doest turn out soggy after baking it with the filling.

THE FILLING

For the filling, I prefer peeling the apples but you can leave them and just cut them in slices, they turn out great as well.

So, you start by peeling the apples and cutting them in slices or small squares. Try to make them them all similar sizes. This allows the apples to cook evenly in the frying pan before baking. I recommend you cut the apples in thin slices. This shape cooks faster and they turn out really soft without going mushy.

Apples, when cooked, let out a little bit of water but for this recipe we have to help with more! Before cooking the apples you spray the pan with vegetable spray and when the apple slices start making a sizzling noise add the water to help them soften.

You can make the filling while the crust is baking or beforehand, that depends on you!

TOPPING

For the crumble topping, remember to save a bit of the oat base! You use that, add a few its and a little extra oats and there you have it, a perfectly pretty crumble topping!

You can use any type of nuts, almonds, walnuts, peanuts, etc. I used almonds because I think that toasted almonds taste the best.

Add the extra oats and chopped nuts t the crust mixture and with your fingers crumble it on top of the filling.

Ingredients

  • CRUST
  • 2 cups oats + 2 tbsp for topping
  • 5 tbsp olive oil
  • 4 tbsp water
  • 2 tbsp honey
  • FILLING
  • 4 Peeled apples
  • 3 tbsp cinnamon
  • 1 tsp nutmeg
  • 1/4 cup + 1 tbsp water
  • 4 a 6 small sweetener bags
  • + 10 almonds for topping

Instructions

  1. Preheat the oven at 180 degrees celsius and use oil spray on the pan you'll be using to bake the pie.
  2. Add oats, honey, milk and oil to a food processor and pulse until they are completely mixed.
  3. Using your fingers press down about 3/4 of the dough for the crust and save the rest for the crumble topping.
  4. Bake for 13 min.
  5. For the filling, cut the apples in thin slices, trying to make them all the same size so that they cook evenly. Add the slices to a bowl with the cinnamon, nutmeg and sweetener, mix so that they are all coated.
  6. Spray a pan with vegetable spray and cook the apples at medium/high heat.
  7. When the apples start sizzling, add water and stir..
  8. Let the apples cook until they are soft.
  9. Place the cooked apples on top of the bakes oat base.
  10. In another bowl, add the dough you saved earlier with the extra oats and chopped almonds. Crumble the mixture on top of the apples.
  11. Bake the pie until the edges are brown.
