LOADED BROWNIES

I’ve been making these brownies since the very beginning of Ginger. Back in high school I think, senior year. I made thee babies for a rehearsal I had with my friends and they lasted about a minute before disappearing completely. Honestly, think about it, what are the parts in this brownie? Everything already tastes amazing by itself. So why wouldn’t they work well together? These loaded brownies are delicious, perfect for ice-cream or even by themselves.

Back when I used to sell my desserts this was one of my best sellers. I made them in the shape of cakes, in squares or even smaller for parties. They were a hit!

The classic of classics in my house is this brownie. Between my sisters and me, I don’t know who is a bigger Oreo cookie fan. Once I finally found my perfect chocolate chip cookie recipe, these loaded brownies got even better.

PARTS OF THESE BEAUTIFUL LOADED BROWNIES:

Starting with the base. The base of this brownie is chocolate chip cookie. The more chocolate you add to this dough, the better. The next step are the oreos. A layer of classic oreos on top of the cookie dough. On top of that, spread some dulce de leche. A big layer of dulce de leche to make everything amazing. Finally the brownie batter. With that, we have these amazing brownies. Amazing right?

TIPS FOR PERFECT LOADED BROWNIES:

The cookie: Starting with the cookies. I like baking the cookies by themselves for a couple of minutes before adding the rest of the ingredients on top and finishing baking it. This helps the cookie to completely bake the cookie all the way through. Now, make sure to not go overboard with this step. If you bake it too much on its own, the cookie can turn out hard or burnt once everything else is baked. You can find the chocolate chip cookie recipe here. For this recipe, you will use just half of the recipe. If you still have dough left you can freeze it or just bake them as regular cookies.

Dulce de Leche: I’ve tried this recipe with many different dulce de leche textures already. It comes out amazing with all of them. Just make sure the dulce de leche you use is not very liquid. If it has that texture, the brownie batter will probably absorb everything in the oven. Another great option for this part of the brownie is to use nutella or a combination of both. Yes, the flavor changes bit it still tastes amazing.

The oreos: Just like dulce de leche, you can combine or change the flavor of the oreos. This depends on what you can find. White oreos, broke, red velvet, anything. There are many many options. This also changes the flavor a bit but the difference can be interesting.

EQUIPMENT:

Baking dish: A rectangle baking dish of around xx inches long and cc inches wide.

Parchment paper: So taking the brownie out of the dish is easy. You can also just use butter. The objective is to be able to take it out easily.

Chopping board: To cut the chocolate for the cookie dough, the butter, anything you need for this recipe.

Measures: For the cookie dough and brownies butter. Cup, tablespoons, and a kitchen scale.

Knife: Like I always say, the best knife is the one you are the most comfortable with.

Silicone spatula: I like using this for the brownie batter. I find it comfortable for everything.

Bowls: You will be using bowls for the brownie batter, the cookie dough and if you are like me, smaller ones for the ingredients as well.

Oven and microwave.

Yield: 8 Big squares

LOADED BROWNIES

Ingredients

  • 1/2 Chocolate chip cookie dough recipe (link in the blog post) 
  • 15 Classic oreos 
  • 200 gr dulce de leche
  • Extra butter for the baking dish. 

Brownie

  • 70 gr butter
  • 150 gr sugar
  • 1 tsp vanilla extract 
  • 38 gr cacao powder 
  • 1 egg 
  • 30 gr flour 
  • 1 Pinch of salt 

Instructions

  1. Preheat the oven to 350 F
  2. Prep baking dish with parchment paper or butter.
  3. Make cookie dough following instructions in the post.
  4. Add butter, sugar, and cacao to a bowl. Microwave for 30 seconds. Stir and microwave for 30 more seconds.
  5. Mix well and add egg and vanilla extract. Mix well.
  6. Add flour and mix is slowly.
  7. Press enough cookie dough to the bottom of the baking dish to cover it completely. Make sure the layer is not too thin or too thick.
  8. Bake for 10 minutes. The dough should be paler and a bit fluffier looking.
  9. Add oreos, cover the dough completely.
  10. Add dulce de leche covering the oreos completely.
  11. Add brownie. Spread carefully.
  12. Bake for 40 minutes or until when poking with a toothpick it comes out almost clean.
