HEALTHY FLUFFY OAT PANCAKES
Breakfast is my favorite meal of the day, everyday. That being said, I believe even healthy oat pancakes need a little extra. Specially in days like sundays for example when at least I want to have yummy yummy food. This pancake recipe is pretty simple and with a few changes in the process, they end up fluffy, light and delicious. This is a basic recipe. You can add anything you want to these pancakes. Bananas, apple slices, chocolate chips, anything!
Another option is, before you cook the pancake, cook some apple slices with some coconut oil and cinnamon. When you are cooking the pancake, add the cinnamon slices. It’s like having apple pie for breakfast.
TIPS FOR THE PERFECT OAT PANCAKES:
Egg whites: Even if you decide to use the entire egg, separate the egg whites before you start. Whip up the egg whites until they form stiff peaks. This gives the pancakes a beautiful light texture and makes them fluffy. How to know when they are ready? Once you can form stiff peaks or, if you draw a line it stays drawn. Another way of knowing your egg whites are ready is turning the bowl upside down. They do not have to move at all!
The rest of the ingredients: Add the rest of the ingredients to another bowl and mix well. Here, you can use anything you want to mix it in, a fork, spoon, anything. On the other hand, when you add these ingredients to the egg whites, use a silicone spatula and mix in slowly.
Mixing in: Start by “cutting” the mixture in half and then go to the right. All the way up again and repeat switching sides each time. Do it slowly and just until it mixes in.
Cooking: Over medium/ low heat and with a bit of oil or butter in your pan so that the pancakes don’t stick. When the pancake start to bubble or the sides turn a bit less bright in color. Flip the pancake, but don’t press it down! You want all the air you can get.
EQUIPMENT:
Bowl: A medium or large bowl. This depends on how many pancakes you are making. I don’t recommend using a small bowl. Egg whites grow in size, so you need space! Also, you will need another bowl, this time, it can be smaller, for the rest of the ingredients.
Mixer: I used a hand mixer but for this particular recipe you can use any type of mixer you own.
Food processor: To turn regular oats to oat flour.
Silicone Spatula: To mix in all the ingredients.
Teflon Spatula: To turn the pancakes!
Pan: You’ll be cooking the pancakes in this.
HEALTHY FLUFFY OAT PANCAKES
Ingredients
- 2 Eggs
- 3 big spoon fulls of oat flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- sweetener of choice
- 1 Pinch of salt
- Olive oil spray or butter
Instructions
- Start by separating the egg whites from the yolks
- In a small bowl, mix oat flour, yolks, vanilla and salt. In case you want to add sweetener, add as well. Mix well.
- Whip up the egg whites until stiff peaks form.
- Add oat mixture to the egg whites, and slowly and carefully fold them in.
- Add baking powder and fold it in as well.
- Place pan over medium/ low heat. Add a bit of oil spray.
- Cook pancakes one by one. Add some batter to the pan and after a few minutes, flip and cook on the other side.
- Serve with your favorite toppings
