CINNAMON WHITE CHOCOLATE CHIP COOKIES

I had my cart full of sweets and yummy food already as I was passing the chocolate aisle at Target. I was looking at those chocolates one by one as if I hadn’t picked up so many sweets already, full on concentration. There wasn’t anything that really caught my eye to be honest. I kept going on my way to the register and, between other things, I saw a golden bag of lindt truffles. It was a gold color I did not recognize though, so I was particularly interested. Yes, I know, I love sweets. I picked it up and saw they were white chocolate snickerdoodle truffles. Snickerdoodles are cinnamon cookies basically. What and amazing combination right? I had to make something with that combination of flavors. I tried a few recipes before coming to this gorgeous cinnamon white chocolate chip cookies.

The first recipe I tried was white chocolate covered cookies. Yes, the flavor was there, but the process of making them was extremely long and a bit complicated. Even I didn’t want to make them again. Next. The next recipe testing was a sandwich cookie. I filled the cookies with salted caramel and covered in white chocolate. Again, too complicated and not good enough to make it worth it. So, after those trials and errors, I went back to the classic and perfect chocolate chip cookies. I think there are so many ways to change up the chocolate chip cookie recipe without changing the basics, chocolate chips. That is hoy these babies, cinnamon white chocolate chip cookies were born.

This cookie. I dont; want to describe the cookie to much with words becasue I really want you to try it and tell me what you think. The combination of white chocolate and cinnamon is one that you don’t expect to work so perfectly. This cookie doesn’t have too many parts to explain. The dough has a lot of cinnamon flavor and a loooot of white chocolate chips as well. You get a perfectly balanced cookie, crispy on the outside and so soft on the inside.

Tips for perfect cinnamon white chocolate cookies:

Butter: The butter has to be cold. Cold butter for recipes like these is essential. It makes getting fluffy, chunky cookies so easy. If the butter was left out for a while and it becomes soft by the time you make the cookies, stick the dough in the fridge before baking and that should do the trick.

Chocolate: I recommend using chocolate bars instead of chips. Chop the chocolate bar into different sized pieces. This will give the cookie a beautiful rustic look. I love it. Oh, and also, add a loooot of chocolate.

Weighing: I like to weigh my cookie dough on a kitchen scale. This way you can make sure the cookies are all the same size and they bake evenly.

Cold: Place your cookies in the fridge for a few minutes before baking. This step, is super important because this way, you get chunky and soft on the inside cookies.

Equipment:

Bowls: For the dough, and if you like to measure the ingredients before you start baking, get a few smaller ones as well.

Chopping board: To cut the chocolate, and all the other ingredients you might need.

Knife: For the chocolate and other ingredients.

Stand mixer: You don’t really need this but it makes, making the dough much easier and quicker. Use the paddle attachment and the dough basically comes together by itself.

Kitchen scale: To measure all the ingredients. You will need a kitchen scale and cup and tablespoon measures.

Baking sheet: To place the cookies in the oven.

Parchment paper: It’s super important to use parchment paper or butter in the baking sheet so that the cookies don’t stick.

Plastic wrap: To cover the bowl before placing it in the fridge.

Yield: 13 Cookies

CINNAMON WHITE CHOCOLATE CHIP COOKIES

Ingredients

  • 4 1/2 Cups of flour
  • 1 Cup sugar
  • 1 1/2 Brown sugar
  • 1 1/2 Cups of butter (280gr)
  • 1 tbsp vanilla extract
  • 2 tsp cornstarch
  • 2 tsp baking powder
  • 2 Eggs
  • 4 Cups white chocolate chips or pieces.
  • 1 tsp salt
  • 3 tbsp cinnamon

Instructions

  1. Preheat the oven to 350 and add parchment paper on baking sheet.
  2. Add flour, salt, cinnamon, baking powder, and cornstarch to a bowl. Mix.
  3. In another bowl, mix butter with brown sugar, sugar and vanilla.
  4. Still with the mixer, add eggs one at a time.
  5. Slowly add dry ingredients and mix in by hand.
  6. Add chocolate. Mix in.
  7. Weigh cookies to 150 gr and bake for 21 minutes.
