CHOCOLATE COVERED STRAWBERRY BROWNIE CAKE

This cake, ufff this brownie cake is everything that is good in life. A combination of chocolate, brigadeiro and fresh strawberries. Really, it’s a chocolate dipped strawberry on cake form. I believe that the countries or areas that have strawberries all year round do not know how lucky they are. In Paraguay, we only have a few months in which there are delicious strawberries. It’s like every time I start seeing that beautiful basket full of strawberries on the streets, I NEED to take at least a pound home.

Now, that being said, let’s talk about this brownie cake. The idea in my head was to turn dipped strawberries into a cake. That each bite has a combination of chocolate and strawberries. My first idea was to make a classic cake, with chocolate sponge cake and layers of chocolate fudge. To be 100% honest, that seemed very complicated for the level of energy I had at the time. That’s when, brownie became the base for this cake. Plus, its brownie. Delicious.

PARTS OF THIS BEAUTIFUL BROWNIE CAKE

As always, let’s start by talking about the base. The base of this mega dessert is a gorgeous brownie. Instead of making the brownie in a square pan, you make it in a round cake pan. Once that brownie is ready, and when it reaches room temperature, cut a circle in the middle. In the tips section, I explain these steps better. Scoop out some of that brownie with a spoon. Don’t worry, you’re going to use all that brownie in the decoration.

You are going to fill that space in the middle with chocolate brigadeiro and strawberries cut into small squares. Here you’ll use that circle you cut at the beginning to close the brownie and cover it with melted chocolate. That melted chocolate will act as glue for the decoration and for that lid to stay in place.

Now, the decoration. The best part. A combination of brigadeiros, brownie balls (I told you you’re going to use that filling), sliced strawberries, chocolate covered strawberries and some chocolate chip covered brigadeiros. It sounds like a lot but it’s pretty easy to put it all together, I promise.

TIPS FOR A PERFECT BROWNIE CAKE

The circle: The round cut of the top is going to be done carefully. The goal is to have a brownie “lid” to close the cake later. Use a sharp knife and cut diagonally towards the center. Carefully lift the lid and there scoop out the filling with a spoon. Make sure to take out enough to fit in enough filling.

The decoration: The decoration is a combination of brownie balls, brigadeiros, chocolate covered strawberries and fresh sliced strawberries. There is not much science in how to put these elements on the cake really. What you have to do is add them one by one and mix the elements. This is going to create such a cute look on the cake.

The order: Let’s talk about how you have to make this cake. After finishing the brownie, start with the brigadeiro. While that cools in the fridge, you make the dipped strawberries. While those two items are chilling in the fridge, you’re going to cut out the center of the brownie. You prep the strawberries, some cut into squares and others into slices. When everything is ready, the chocolate covered strawberries and the brigadeiro, assemble everything. Fill the cake with the brigadeiro and the strawberries in squares, cover with the brownie lid and decorate it.

Chocolate dipped strawberries: The important thing when dipping strawberries in chocolate is the preparation. You have to wash the strawberries well and dry them super well. Its very important that they are completely dry so that the chocolate sticks to the strawberries and doesn’t peel off.

EQUIPMENT

Cake pan: I used a 7 inch cake pan for this recipe.

Bowls: A large bowl for the brownie batter and a smaller one for the melted chocolate.

Saucepan: To make the brigadeiro in.

Silicone spatula: For the brigadeiro and the brownie batter.

Plates: To cool down the brigadeiro and another plate for the chocolate dipped strawberries.

Parchment paper: Once you cover the strawberries in chocolate place them over parchment paper so that they don’t stick.

Chopping board: To cut the strawberries in and all the ingredients you need.

Knife: To cut and chop everything.

Measures: For all the ingredients, cups, tablespoons and a kitchen scale.

Yield: 7 INCH CAKE

CHOCOLATE COVERED STRAWBERRY BROWNIE CAKE

Ingredients

BRIGADEIRO

  • 1/2 Can sweetened condensed milk
  • 1/4 + 2 tbsp cacao powder
  • 1 tbsp butter

BROWNIE

  • 140 gr butter
  • 300 gr sugar
  • 1/2 tsp vanilla extract
  • 75 gr cacao powder
  • 2 eggs
  • 60 gr flour
  • 1 pinch of salt

EXTRA DECORATION

  • 1/2 cup chocolate chips
  • 4 strawberries cut into tiny squares
  • 6 to 7 strawberries covered in chocolate
  • 3 extra strawberries for decoration

Instructions

  1. Star by making the brigadeiro. Add all the ingredients to a saucepan and place over low heat. Stir constantly until it thickens and when putting the pan sideways it pools down on its own.
  2. Pour onto a place and cover with plastic wrap. Let it cool in the fridge.
  3. Make the brownie. Add butter, sugar an cacao to a bowl. Place in the microwave for 1 minute.
  4. Mix in and place in the microwave for one more minute. Mix well.
  5. Add one egg at a time, mixing well between each one. Mix by hand.
  6. Add vanilla and salt.
  7. Add flour and mix in slowly.
  8. Place on cake pan previously prepped with butter to avoid sticking and bake for 40 minutes or until when sticking a knife in the middle it comes out almost clean.
  9. Let it cool completely.
  10. Meanwhile, dip the strawberries in chocolate. Wash and dry the strawberries. Melt some chocolate in a bowl and dip the strawberries in the melted chocolate. Place over parchment paper to let it harden.
  11. Make the cake. Cut a circle in the center of the brownie. Take out some of the brownie to make space for the filling. Do not throw away the brownie you took out.
  12. Shape some brigadeiros into balls and cover in chocolate chips.
  13. Fill the cake with brigadeiro mixture and the diced strawberries. Cover with the circle you cut out before.
  14. Melt more chocolate and cover the top part of the brownie with it.
  15. Decorate the brownie combining the dipped strawberries, sliced strawberries, brownie balls (made with the filling you took out) and brigadeiros covered in chocolate chips.
