CHOCOLATE CHIP COOKIE DOUGH ENERGY BALLS

As a little kid, I found the best part of baking to be trying and actually eating the batters or raw dough. Don’t lie to me, I know you did or maybe still do. These cookie dough energy balls taste just like regular cookie dough and they are actually good for you!

Like I always say, I am a huge fan of sweets in general. When I was younger, at home, my mom or th woman that helped take care of us would always bake something yummy for the weekend. Cakes, cookies, anything! My idea, now that I live with my husband, is to always have something yummy ready to eat. With that in mind, I planned on looking for a few diferent healthier options of yummy desserts to mantain that tradition.

These energy balls come together so quickly and you just need a food processor. You don’t need many ingredients or equipment and you have a perfectly delicious and healthy snack that keeps you full for a long time! The idea is to make these balls and have them ready in the fridge or freezer ready to eat. I keep them in the freezer and with a couple and a huge cup of coffee I am full for hours! I promise.

SO WHAT IS SO GREAT ABOUT THESE COOKIE DOUGH ENERGY BALLS?

These energy balls are made up of a combination of cashew butter and oat flour, so, they fill you up pretty good!

All the ingredients in these balls are natural, good for you and healthy. Ingredients like oats, honey, and almond milk.

One or two keep you full for a long time!

They are easy to make, easy to keep, and easy to take anywhere.

Besides all that, I promise, the flavor is just like chocolate chip cookie dough. Delicious!

TIPS FRO A PERFECT ENERGY BALLS:

The Butter: I recommend choosing a nut butter that has kind of a neutral taste. The ides is to taste the vanilla and the chocolate chips, not the but butter as much. So, I recommend not using peanut butter. Peanut butter has a very strong, characteristic flavor. If you prefer it, you can definitely make it with peanut butter. For this recipe I looked for a genuine chocolate chip cookie flavor. I haven’t found a more neutrally flavored nut butter than cashew butter. The other closest option is almond butter. This depends on your personal taste and what you find at the grocery store.

Food Processor: You don’t need an extremely strong one. Any kind will work. A blender works as well!

The size of the energy balls: Make it around a tbsp big. If you have the spoon measurement use it! This helps keeping them the same size.

The chocolate: In this case, I recommend using the chocolate chips that come in a bag instead of the chocolate bar. I think it looks better this way!

EQUIPMENT:

Food processor: If you dont find the nut butter you want you can make it a well in the food processor. Once the butter is ready, use it for the dough!

Spoon: To make sure everything mixes well, you can also use a silicone spatula.

Measurements: I always recommend having cup and tbsp measures instead of using a regular coffee cup.

Ingredients

  • 1/2 Cup cashew butter
  • 1 Cup Oat flour
  • 2 TBSP honey
  • 1 TSP vanilla extract
  • 1/4 Cup chocolate chips
  • 1 pinch of salt
  • 2 TBSP almond milk

Instructions

  1. Add all the ingredients, except chocolate chips, to the food processor.
  2. Process until completely mixed.
  3. Add chocolate chips and fold in with a spoon or silicone spatula.
  4. Using a cookie scoop or TBSP, measure the dough and shape with your palms
