BRUNCH BOARD

Ever since I can remember, Mother’s Day is having breakfast with my Mom. Eating a lot of breakfast and yummy food. When I was little, we used to buy a breakfast combo thing that had a little bit of everything. In theory it was made for one or two people but we ate it between all four of us at the time. I grew up and that combo gradually changed to a homemade breakfast. I am completely sure that my mom would hear us making a huge mess in her kitchen every mother’s day and pretended to be asleep. Today, combining that feeling with my favorite food, I came up with this Brunch board.

The combination of lunch and breakfast meals at a any time of day such as 11 am is, for me, the best thing ever. I am a fan of breakfast foods. Pancakes, scrambled eggs, muffins, everything. On the other hand, those meals combined with things like guacamole, cookies, charcuterie and different cheeses, even better. And if you can add drinks like mimosas, aperol spritz or a good sangria to all that, I don’t know what’s better. Brunch really is the best. If I could, every Sunday I would have brunch with my my whole family.

Before we keep talking about this gorgeous brunch board, I’ll link a few of my favorite breakfast recipes that you can include in your next brunch.

PARTS OF THIS BRUNCH BOARD

The great thing about this Brunch board is that there is very little cooking involved. Since it’s a board made for brunch time, which could be breakfast, the easier to make the better. In my opinion at least. My mom gets up early most of the time so we started cooking super early. When you are younger there’s no problem with that, but when you start going out the night before, it gets a bit more difficult. So this board is perfect because all you have to cook are the eggs and the waffles on the day of.

The idea of brunch is to mix sweet and savory foods and that they are not just for breakfast, they’re a mix of everything. So, let’s start with the bread. For this board, I chose to use classic croissants. This is to be able to combine with the other elements of the table. In addition to that, to be honest, the first thing I looked for was a sourdough bread. When I couldn’t find what I was looking for, I saw this brioche bread and fell in love. Aside from those two, added some waffles as well. As for the sweets, some chocolate chip cookies, macarons for different colors and flavors, and fruit, lots of fruit.

For protein, cheese, greek yogurt, charcuterie and scrambled eggs. All that plus a few extra details like granola and we get out gorgeous brunch board.

HOW TO COMBINE

As I always say, to each their own. BUT, I want to tell you a bit about my favorite combinations in this board.

Brioche + Butter + Serrano Ham + Scrambled eggs

Croissant + Butter + Jam

Greek yogurt + Granola + Blueberries + Strawberries

TIPS FOR A PERFECT BRUNCH BOARD

The order: There are two elements that have to be added to the board at the last moment. The first is the scrambled egg. This one goes last because we want it to be warm at the time of eating. So, as soon as everyone is ready to eat, make the scrambled eggs and serve. The other item is the granola. Since you’re adding it on top of the yogurt, leaving it too much time in there the granola will most likely absorb that moisture and lose its texture.

The decoration: To give color to this beautiful brunch board, we are going to use orange slices, strawberries, blueberries and blackberries. These do not have a specific place in the board. It depends on the spaces that are left and need to be filled.

Brunch: If there are more people in the Mother’s Day celebration or where you are going to present this board, you can add more elements in separate board to complete the meal. You can add more breads, flavored butters, more fruits whatever you like. What is really important in a good brunch is mimosas. A perfect mix of orange juice and champagne to enjoy with coffee and this amazing brunch board.

EQUIPMENT

Wooden tray or board: I used a rectangular breakfast tray. I think I got it at the supermarket. Pretty simple board.

Parchment paper: To place on the base of the tray, before all the food.

Small bowls: I used wooden bowls, you can use ceramic or glass bowls. It’s up to you. You’ll need two small ones for butter and jam and a slightly bigger one for yogurt.

Small skillet: I used a small iron skillet for the eggs. You can also use a bowl or small plate.

Regular skillet or pan: To make the scrambled eggs in.

Spatula: To make the eggs.

Chopping board: To make the cuts in every ingredient you need. Bread, cheeses, fruits, etc.

Cutlery: Spoons, knives and forks, everything you need to make or eat the board.

Ingredients

  • 4 Slices of brioche bread or the bread you like.
  • 2 classic croissants
  • 2 waffles (Oat or regular waffles)
  • 4 eggs (scramble them)
  • 3 chocolate chip cookies
  • 3 macarons
  • 150 gr Serrano Ham
  • 1 small brie (120 to 150 gr)
  • Jam
  • Butter (+flaky salt)
  • 1 Orange
  • Strawberries
  • Blueberries
  • Blackberries
  • Fresh rosemary
  • 250 gr Greek yogurt
  • 100 gr granola
  • Green onion

Instructions

  1. Add parchment paper to the base of the wooden tray.
  2. Add all the bowls you'll need.
  3. Add the larger elements of the board, croissants, bread and waffles.
  4. Cut the brie a bit and place beside the croissants.
  5. Between the side of the tray and the cheese ad the ham slices.
  6. Fill the space between the cheese and croissants with extra ham.
  7. Add the cookies and macarons between the croissant and bread.
  8. Add jam and butter to the smaller bowls and yogurt to the larger one.
  9. Fill the free spaces with fruits.
  10. Add granola to the yogurt.
  11. Finally, before you serve the brunch board, make the scrambled eggs and place in the skillet. Decorate with green onion.
