BANANA NUTELLA CAKE
What to do with those brown bananas that are about to go bad? If you are not like my dad who does not have a problem with eating them like that, go ahead. I, on the other hand, can’t even look at them when they look like that to eat it by itself. That being said, this is when the bananas have their most flavor and moistness. A very deep flavor, super sweet and add so much moisture, that would not be the case if they looked fresh and yellow. At my parent’s house, there would always be leftover bananas that nobody would eat. We would always throw them out. Banana cake is so versatile and delicious. Why versatile though? You can have it for breakfast, for dessert, as an afternoon snack, any time of day. This chocolate chip banana nutella cake is no exception.
Banana bread is a dessert (or bread) that really goes with everything. For breakfast you can mek it without chocolate chips and add nuts. For dessert, you can make it with chocolate chips, add a bit more banana to the batter and serve it warm with dulce de leche. Wow, what do you think about that combination? Banana, chocolate and dulce de leche. Amazing. I want some right now. You can also make it like in this recipe, a beautiful cake with nutella topping. Like I said, versatile.
Parts of this beautiful banana cake
The base of this dessert is banana bake batter. A super moist batter made with those ripe bananas, a bit of vanilla will give our cake a beautiful flavor. After that, add some chocolate chips. Most of the time, I tell you to get a chocolate bar and chop it to make the cookies look a bit more rustic. In this case, use chocolate chips. I will explain why further down. Finally, once the cake is at room temperature, spread a gorgeous layer of nutella on top. That is going to be the decoration on the cake as well. Simple and classic.
Tips for a perfect banana nutella cake:
Bananas: To take 100% advantage of the flavor in banans make sure they are really ripe. I mean brown bananas are the best. If your bananas are still too yellow you can place them in the oven. Preheat the oven to 300F. Place the bananas one by one, peel on, on a baking sheet. Remember to turn the light of your oven on to be able to see the color change. Once the just turn completely brown, they are ready. The time in the oven depends on how yellow your bananas are.
Chocolate: My recommendation is using semi sweet chocolate for this recipe. Find 70% to 75% cacao chocolate chips. These babies will combine soo perfectly with the sweeteness of the banana and nutella. Another thing, find chips, not a full chocolate bar. The chocolate chips will give the cake a nice look to it.
Nutella: Before you spread the nutella over the cake, make sure that the cake is completely cooled down. It can’t even be warm because the nutella will melt on top. To decorate the cake, once cooled, cut the top part to make it even and spread the nutella only on top. Using the same spatula, spoon or knife, you can make a swirl on top.
Equipment:
Bowls: One for the cake batter, another for the dry ingredients. In case you want to weigh and measure all your ingredients beforehand, take out a few smaller bowls as well.
Silicone Spatula: Or a spoon. You will use this to make almost the entire cake.
Measures: For all the ingredients. Cup and tablespoon measures as well as a kitchen scale.
Cake pan: A 7 or 8 inch pan. I recommend using a detachable cake pan.
Whisk: You will need a whisk at the very begining of the recipe.
Potato smasher: To puree the bananas.
BANANA NUTELLA CAKE
Ingredients
- 450 gr bananas
- 150 gr butter + extra for the cake pan
- 1/2 Cup sugar
- 1/2 brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 3/4 Cup flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup chocolate chips
- Nutella
- 1 tsp salt
Instructions
- Preheat the oven to 350F.
- Add bananas to a bowl and puree completely.
- Add eggs and mix well with a whisk or fork.
- Add vanilla extract and sugars. Mix well.
- Melt butter completely and slowly add to batter whie mixing.
- In another bowl add dry ingredients. Flour, baking powder and soda.
- Slowly add the dry ingredients into the mixture, mixing in with a silicone spatula.
- Finally add the chocolate chips.
- Spread some butter on the inside of your cake pan and cover that in flour. Discard excess.
- Pour the batter in and bake fro about an hour or until when inserting a knife or stick in the middle comes out clean.
- Take out of the oven and cool completely.
- Once cold, spread nutella on top.
