BANANA BREAD
I am in LOVE with banana bread! It’s so moist and sweet! But, the best thing about it is that you can have it for breakfast, as a snack or dessert! How amazing is that?
I think that most cakes or desserts that are made with fruits or vegetables make me think I can eat them at any time of day. I don’t know why my brain works that way but it ignores the rest of the ingredients and focuses on the healthy part, fruits and veggies.
I have always been interested in banana bread. It’s not exactly cake and it’s not bread either. You can make this recipe in any cake pan, but I prefer making it in a rectangle one keeping the “bread” look.
This always happens to me, I buy beautiful yellow bananas and I forget I even bought them once I get home. Or, I just don’t eat enough and they go bad. The bananas start to turn brown or black and pretty soft, so I make banana bread! The browner the better for this recipe! Brown bananas add moisture and sweetness to the bread.
This recipe es AMAZING, if I do say so myself. I added a lot of chocolate chips and some chopped walnuts to the batter and as a topping before baking it! You can add a bunch of different things to change it up a little bit, like cinnamon, almonds or other nuts.
HOW TO:
Okay, so I am not actually going to tell you HOW to eat anything but here are some ways I like to eat it.
Just like that, cut a piece and enjoy freshly out of the oven, or when it cools down. You can reheat it in the microwave for a few seconds and it turns out great!
Cut a slice and toast it, on th toaster, grill or even a pan over medium/high heat. I don’t remember where I read this but it was so good! It gives it a crispy outer crust changing the texture a bit.
Heat it up, and add ice-cream. Vanilla ice-cream goes with anything, try mixing things up and use dulce de leche or a caramel ice-cream. The combination of bananas, chocolate, nuts and dulce de leche is out of this world
EQUIPMENT:
Potato masher or fork: This is the first thing you’ll be using when starting the recipe to smash the bananas completely! You can do this with a food processor as well just be careful not to leave it too long ir it will become banana juice and we need puree.
Bowls: One for dry ingredients and another one for the liquids.
Kitchen scale and cup measures: Measure everything before you start baking! Having everything measured and ready to go makes everything easier!
Rectangular cake pan: The cake pan I used for this recipe has a width of 14 cm, 25 cm long and 7 cm tall.
Hand mixer: The first ingredients have to mix well before adding the dry ones! Use this mixer and you are good to go! A fork or a spoon work as well!
Silicone spatula: Add the dry ingredients slowly and mix it with the silicone spatula so that there is no unnecessary air getting into your dough.
BANANA BREAD
Ingredients
- 400 grs of bananas (1 2/3 cup)
- 150 gr butter (1 1/2 sticks)
- 1/2 Cup sugar
- 1/2 Cup brown sugar
- 2 Eggs
- 1/2 Tbsp vanilla extract
- 1 1/2 Cups flour
- 1 Tsp baking powder
- 1 Tsp baking soda
- 1 1/2 Cup chocolate chips
- 3/4 Cup chopped walnuts
Instructions
- Preheat the oven at 340F.
- Puree bananas in a bowl.
- Add eggs and mix completely.
- Add vanilla extract and both sugars. Mix well.
- Melt the butter and add it to the mixture, slowly.
- In another bowl, mix dry ingredients.
- Slowly add the dry ingredients mixing with the silicone spatula.
- Finally add chocolate chips and chopped walnuts. Remember to save a little of both ingredients to sprinkle on top!
- Spray the cake pan with oil and pour the mixture in. Bake for around an hour or until a knife or toothpick comes out clean.
